What is so special about our Vintner’s Reserve Cabernet?  Well, for one thing, we don’t make it every vintage…and for another, when we do make it, we only make ten barrels worth!  We start with our vintage Cabernet.  When we get to the point where the wine has been in the barrel for about one year, we taste through our entire inventory of barrels (over 300) and if we find 10 that exhibit what we consider to be exceptional character, we set them aside.

We take these special barrels and blend them together and rack them into French oak barrels for an additional year of aging.  This new oak adds more layers of flavor nuances to the wine.  After that year, we bottle and set aside for at least six months before we release to market.

The Vintner’s Reserve exhibits a deeper more intense color with brick colored edges.  The aromas are distinct cherry and plum with notes of smooth dark chocolate, well-aged tobacco, coffee bean and vanilla.  The flavors follow through with the aromas.  The finish is intense…filled with silky tannins and a warm glow.

We feel strongly that allowing this wine to mellow in barrels for another year pays huge dividends to those who enjoy fine wine.  One more year of paying our “heavenly taxes” is worth it.  When you age wine in a barrel, there is evaporation through the porous wood.  This evaporation is called the “angels’ share.”  Giving the angels a little more, gives us a truly special wine!
