Well, in addition to being more romantic, we believe that harvesting under starlight produces a superior wine. We harvest our grapes at night using a machine harvester. We believe that machine harvesting for wine grapes is the only method to consider. The machine harvester shakes the trellis and the ripe berries simply fall off the vine. The harvesting is done at night when the fruit is cool to protect the fruit and its luscious flavors. The fruit then arrives at the winery in the twilight of early morning. This process is dramatically different from hand harvesting during daylight. Hand harvesting involves cutting the rachis supporting the bunch and taking it to the winery for de-stemming. Some of the tannin (excessively sharp taste in the wine) comes from the grape drawing in tannin during the hours it remains on the rachis prior to de-stemming in the winery. (In contrast, with machine harvesting, the grapes are immediately removed from this source of tannin.) Hand harvesting typically begins at dawn and is completed around noon, with trucks arriving at the winery in late afternoon the time of highest heat.
I have been a pilot for 30 years. I think that so many years of focusing my attention on the heavens may have been a factor in deciding on Celestial as a brand! The name also beautifully captures the way we harvest our grapes late at night, under the stars.
